Bean and Lentil Caprese Salad

Instructions

  • COOK bean & lentil blend in water according to package cooking instructions. Drain.

  • COMBINE cooked bean & lentil blend and dressing in medium bowl. Stir until blended.

  • STIR in tomatoes and cheese. Cover and chill until ready to serve. Stir in basil just before serving.

  • MICROWAVE water in large microwave-safe bowl on HIGH 15 minutes or until just beginning to boil. Stir in bean & lentil blend. Cover tightly with plastic wrap and microwave on HIGH 5 minutes. Let stand 15 minutes to allow beans to soften. Stir. Cover and microwave an additional 2 minutes. Let stand 5 minutes or until tender. Drain. Proceed as directed above.

  • 1 cup truRoots® Organic Sprouted Bean & Lentil Blend
  • 4 cups water
  • 1/2 cup Italian dressing
  • 1 cup grape or cherry tomatoes, halved
  • 1/2 cup fresh mozzarella cheese pearls or diced fresh mozzarella cheese
  • 3 tbsps. thinly sliced fresh basil
