Makes 4 servings
1 (8 oz.) package truRoots® Ancient Grains Organic Penne
1 (14.5 oz.) can diced tomatoes with Italian herbs
2 teaspoons balsamic vinegar
1 tablespoon fresh chopped basil, plus sprigs for garnish
Dried grated Parmesan cheese
- COOK pasta in large pot of salted boiling water, just until al dente, about 6 to 8 minutes. Drain.
- HEAT tomatoes in medium saucepan over medium-low heat until bubbling. Remove from heat. Stir in vinegar and basil.
- PLACE pasta on serving platter. Top with tomato mixture, cheese and basil sprigs for garnish.
