1/4 cup orange juice

2 tablespoons olive oil

1/2 teaspoon grated orange peel

1/4 teaspoon salt

1 1/3 cups fresh seedless orange sections

1/2 cup diced celery

1/2 cup chopped pecans

2 tablespoons sliced scallions
Instructions
- COOK rice & quinoa blend according to package directions. Cool to room temperature.
- WHISK together juice, oil, zest and salt in medium bowl.
- ADD rice & quinoa blend, orange sections, celery, pecans and scallions. Cover and chill 1 to 2 hours, until ready to serve.
