Italian Pasta Salad

Ingredients

  • 1 (8 oz.) bag truRoots┬« Ancient Grains Organic Elbows
  • 6 oz. pepperoni stick, diced
  • 6 oz. provolone cheese, cubed
  • 1 cup thinly sliced celery
  • 1/2 cup chopped red onion
  • 1/2 cup small radishes, sliced
  • 1 pint grape or cherry tomatoes, halved
  • 1 cup small broccoli florets, heavy stems removed
  • 1 (2.25 oz.) can sliced black olives, drained
  • 1 cup prepared Italian or Balsamic salad dressing, divided
  • Salt and pepper

Instructions

  1. COOK pasta according to package directions. Drain.
  2. COMBINE pasta, pepperoni, cheese, celery, onion, radishes, tomatoes, broccoli, olives and 1/2 cup salad dressing in large bowl until well combined. Chill.
  3. TOSS with remaining 1/2 cup salad dressing just before serving. Season to taste with salt and pepper, if desired.
