Quinoa, Cherry and Feta Salad

Ingredients

  • 1 cup uncooked truRoots® Organic Quinoa
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons Santa Cruz Organic® Pure Lemon Juice
  • 3 tablespoons honey
  • 1/2 teaspoon ground thyme
  • 1/2 cup coarsely chopped dried cherries
  • 1/2 cup crumbled feta cheese
  • 1/2 cup coarsely chopped pecans
  • 2 tablespoons minced fresh parsley
  • Salt and pepper to taste

Instructions

  1. PREPARE quinoa according to package cooking instructions. Cool to room temperature. Fluff with fork.
  2. WHISK oil, lemon juice, honey and thyme in large bowl. Add quinoa, cherries, cheese, pecans and parsley. Stir to combine. Season with salt and pepper. Chill.
