Quick Pasta Marinara

Ingredients

  • 1 (8 oz.) package truRoots┬« Ancient Grains Organic Spaghetti
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup minced onion
  • 1 (14.5 oz.) can diced tomatoes with Italian herbs
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon fresh chopped basil, plus sprigs for garnish
  • Dried grated Parmesan cheese

Instructions

  1. COOK pasta in large pot of salted boiling water, just until al dente, about 5 to 7 minutes. Drain.
  2. HEAT oil in large skillet over medium-high heat. Saute onions, 4 to 5 minutes, or until softened. Stir in tomatoes and vinegar. Bring to a boil. Simmer 5 to 7 minutes or until sauce thickens slightly. Stir in basil.
  3. PLACE pasta on serving platter. Top with marinara, cheese and basil sprigs for garnish.
