1/2 cup truRoots® Sprouted Quinoa & Ancient Grain Medley
1/2 cup Greek vinaigrette dressing
2 cups diced cucumber
1 cup grape or cherry tomatoes, halved
1/2 cup crumbled feta cheese
BRING water to a boil in small saucepan. Stir in quinoa & grain medley. Cover with tight-fitting lid and cook over low heat 20 to 25 minutes or until water is absorbed and medley is tender.
COMBINE medley and salad dressing in medium bowl. Stir until blended.
STIR in cucumber and tomatoes. Sprinkle with feta cheese. Cover and chill until ready to serve.
Microwave Cooking Directions
MICROWAVE 1 1/4 cups water in medium microwave-safe bowl on HIGH 3 minutes or until just beginning to boil. Stir in 1/2 cup quinoa & grain medley. Cover tightly with plastic wrap and microwave on HIGH 5 minutes. Let stand 15 minutes to soften. Stir. Cover and microwave an additional 3 minutes or until tender. Drain, if necessary. Proceed as directed above.
