HEAT oven to 350°F. Combine flour, chia seeds, seasoned salt and pepper in large resealable plastic bag.
WHISK eggs in shallow bowl. Add chicken tenders to flour mixture, 2 to 3 at a time, shaking to coat. After all chicken is coated, add bread crumbs to remaining flour mixture. Dip chicken tenders in egg, then into bread crumb mixture to coat.
PLACE oil in 13 x 9-inch baking dish. Place in hot oven to melt oil, about 7 minutes. Remove from oven. Tilt dish to coat evenly with oil. Arrange chicken in dish in single layer. Bake 17 minutes. Turn chicken. Bake an additional 17 minutes or until golden brown and internal temperature reaches 165°F.
