Black Bean Quinoa Salad

Ingredients

  • 1 cup uncooked truRoots® Organic Quinoa
  • 2 cups water
  • 1/3 cup extra virgin olive oil
  • 1/4 cup Santa Cruz Organic® Pure Lime Juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 (14.5 oz.) can black beans
  • 1/2 cup red ripe Roma tomatoes, seeded and chopped
  • 1/2 cup diced red onion
  • 1/4 cup diced red pepper
  • 1/4 cup jalapenos, seeded and chopped
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. COOK quinoa according to package directions. Cool to room temperature. Fluff with fork.
  2. WHISK together oil, lime juice, cumin and salt in large bowl.
  3. ADD quinoa, black beans, tomatoes, onions, red pepper, jalapenos and cilantro to bowl. Stir to combine. Chill 30 minutes.
