Bean and Lentil Caprese Salad

Ingredients

  • 1 cup truRoots┬« Sprouted Bean & Lentil Medley
  • 4 cups water
  • 1/2 cup Italian dressing
  • 1 cup grape or cherry tomatoes, halved
  • 1/2 cup fresh mozzarella cheese pearls or diced fresh mozzarella cheese
  • 3 tablespoons thinly sliced fresh basil

Instructions

  1. COOK bean & lentil medley in water according to package cooking instructions. Drain.
  2. COMBINE medley and dressing in medium bowl. Stir until blended.
  3. STIR in tomatoes and cheese. Cover and chill until ready to serve. Stir in basil just before serving.
  4. Microwave Cooking Directions
  5. MICROWAVE water in large microwave-safe bowl on HIGH 15 minutes or until just beginning to boil. Stir in bean & lentil medley. Cover tightly with plastic wrap and microwave on HIGH 5 minutes. Let stand 15 minutes to allow beans to soften. Stir. Cover and microwave an additional 2 minutes. Let stand 5 minutes or until tender. Drain. Proceed as directed above.
